茉莉花释香吸香装置研制及香气吸附试验

摘    要:为解决传统茉莉花茶加工过程劳动强度大,配花量大,能耗大等问题,该文创新花茶加工方式,研发了能精确调控茉莉花释香环境参数及椰壳活性炭吸附花香的茉莉花释香吸香装置,进行不同温湿度对茉莉花释香性状指标及活性炭吸附的香气品质影响试验研究。结果表明,处理T2(温度30℃,相对湿度85%)、T3(30℃,95%)、T5(35℃,85%)的茉莉花失水率、开放度、感官品质及活性炭吸附率等指标优于其他处理;处理T5(35℃,85%)、T4(35℃,75%)、T6(35℃,95%)的茉莉花香气品质得分较高;在茉莉花最佳释香温湿度T5条件下,活性炭吸附率为13.96%。该释香吸香装置延长茉莉花生机,比传统方法提高利润28%,研究结果为茉莉花茶"茶-精油"创新工艺提供参考。
