壳聚糖浸泡处理黄皮果实的贮藏效果分析

摘    要:以海南本地黄皮果实为试验材料,采用0.5%、1.0%、1.5%和2.0%壳聚糖作浸泡果实处理,以0%壳聚糖浸泡果实为对照,研究壳聚糖浸泡处理对黄皮果实贮藏效果和活性氧代谢的影响。结果表明:1.0%以上壳聚糖处理能将果实贮藏期延长至28 d,好果率在84%以上,能明显抑制果实质量损失;1.5%以上浓度壳聚糖浸泡处理能使果实维持较高的可溶性固形物和较高的固酸比;壳聚糖浸泡处理果肉和果皮的MDA含量和PPO活性表现低于对照的趋势,SOD、POD和CAT活性表现高于对照的趋势,表明壳聚糖浸泡处理能减轻果实活性氧自由基损伤和增强果实清除活性氧自由基的能力;1.5%为壳聚糖浸泡处理的最宜浓度。

Abstract:To investigate the effects of chitosan on the storage and the reactive oxygen species (ROS) metabolism of Clausena lansium fruits, the fruits were subjected to the linear gradient concentrations of chitosan treatments in the current study. The results revealed that 1.0% of chitosan may extend the storage period as long as 28 d, and the fine fruits ratio was higher than 84%. Further, the weight loss of the fruits was obviously controlled. The fruits treated with 1.5% chitosan kept higher TSS and TSS/TA. The MDA accumulation and PPO activities in flesh or peel of the treated fruits got lower than that of the control, conversely their activities of SOD, POD and CAT in flesh or peel were superior to that of the control, indicating the chitosan could alleviate the oxidative status and strengthen the svavenging abilities of fruit ROS. Among the tested concentrations, 1.5% was optimal in the storage of Clausena lansium fruits.
