壳聚糖复合涂膜对红富士苹果保鲜研究

摘    要:从以壳聚糖为成膜剂的多个涂膜剂处理中,通过正交试验,确定在红富士苹果保鲜上的最佳处理,试验结果表明,0.75%壳聚糖+4%氯化钙,浸涂时间60 s是最佳的保鲜处理组合.红富士苹果在壳聚糖保鲜过程中,适宜的涂膜处理能够有效降低果实的失重率和腐烂率,延缓果肉硬度下降,减少可溶性固形物、总酸和维生素C的损失,降低果实呼吸速率,从而延缓果实衰老,具有良好的保鲜效果.

Abstract:From chitosan as the film-form ing agentinto a number of chitosan-coating through orthogonal tests to determine the optimum chitosan preservative of Red Fuji apples.Experimental results showed that the best recipe for Red Fuji apples storage is 0.75% chitosan,4% calcium chloride with 60 second scribble time.During the storage period,proper coating with chitosan the rate of weight loss and rotten rate are effectively decreased,the decrease of flesh firmness is slowed down,the total soluble solid,titratable acid and vC content are decreased,the respiration rate is weakened.Therefore,mixed coating with chitosan can delay senescence of fruit so that it has better effect.
