摘 要: | 综述了儿茶素酶促制备茶黄素各反应条件的研究进展,旨在为确定儿茶素酶促制备茶黄素自动化提供科学依据,并就酶促制备茶黄素在选择多酚氧化酶方面以及同工酶方面做研究展望。

Abstract: | This article summarized the research progress of the conditions in the catechin enzymatic preparation of theaflavins and aimed to offer a scientific support for the automatization of the preparation. And an outlook on the selection of polyphenoloxidase and isozyme for the prepartaion was put forward. |
