摘    要:多酚氧化酶(PPO)是茶树生理与茶叶加工中的一类重要氧化还原酶,也是茶黄素及其组分酶促合成中的关键酶。从PPO结构分类、同工酶、PPO与茶叶品质关系、PPO分离纯化及酶促合成茶黄素等方面进行综述,以期为茶树品种适制性评价、茶黄素及其组分高效制备以及PPO同工酶酶源筛选与利用提供科学依据。

Abstract:Polyphenol oxidase (PPO) is one of the most important oxidation-reduction enzyme in the tea tree physiology and tea processing,especially as the key enzyme during the enzymatic oxidation of theaflavins and its components.The current progress of enzymatic characteristic of polyphenol oxidase,tea quality relation with PPO, separation and purification of PPO enzymic synthesis of theaflavins and PPO isozyme were reviewed. To provide scientific basic for tea tree cultivar suitable evaluation system, efficient preparation of theaflavins and its components, selecting and utilizing PPO isozyme enzyme source,etc.
