稀有白甲鱼含肉率及肌肉营养成分分析

摘    要:试验结果表明,稀有白甲鱼含肉率为69.92%;肌肉中蛋白质、脂肪和灰分含量分别为16.58%、2.05%、0.99%;肌肉中17种常见氨基酸(除色氨酸)总含量(占肌肉干重)为77.89%。其中必需氨基酸含量为36.27%,占氨基酸总含量的46.56%。必需氨基酸与非必需氨基酸含量的比值为0.87。鲜味氨基酸含量为26.26%,占氨基酸总含量的33.70%。必需氨基酸指数为70.44。缬氨酸和异亮氨酸分别为第一、二限制性氨基酸。

Abstract:The results of the experiment showed that the dressed ratio of Onychostoma rara averaged 69.92 %.The content of protein in the fresh muscle of the species was 16.58 %,with fat 2.05 %,ash 0.99 %.The total content of 17 common amino acids(except for tryptophan) was 77.89 %.The total content of 9 essential amino acids was 36.27 % and acc ounted for 46.56 % in the 17 common ones.The ratio of the total content of the essential amino acids to that of unessential ones was 0.87.The total content of 4 delicious amino acids was 26.26 %,making up 33.70 % in the 17 common ones.The essential amino acid index(EAAI) was 70.44.According to both the amino acid score(AAS) and the chemical score(CS),the first limited amino acid of the species was valine and the second ileucine.
