摘    要:冷冻干燥(FD)技术是一门科技含量高、涉及面广的干燥技术,目前已被广泛应用于医药及食品加工等行业。简要介绍了FD技术的工作原理,分析了FD产品的特点、工艺流程及生产操作要点,并对FD技术在食品工业中的应用及发展前景进行了阐述。

Abstract:Freeze-drying technology is a high level and wide range food processing technology,this technology is applied widely in the field of medicine and food processing etc.This article introduces the principle of freeze-drying technology.The character and the technology process of freeze-drying products and the applications and development trend in food industry of freeze-drying are reviewed briefly.
