南果梨果实糖积累过程中相关酶的作用

摘    要:以南果梨为试材,测定了不同发育时期果实中的果糖、葡萄糖、蔗糖和淀粉含量以及相关酶的活性-酸性转化酶(AI)、中性转化酶(NI)、蔗糖合成酶(SS)、蔗糖磷酸合成酶(SPS)和淀粉酶的活性,并对果实中糖积累与酶活性的关系进行了分析。结果表明:南果梨果实发育呈单S曲线;幼果期和迅速生长中期,果糖和葡萄糖积累较多,蔗糖无积累,与此期高活性的蔗糖转化酶有关;酸性转化酶、中性转化酶前期活性高,后期活性低;蔗糖合成酶和蔗糖磷酸合成酶的活性变化相似,呈V形变化趋势。果实成熟前蔗糖开始快速积累,蔗糖的积累是多种酶共同作用的结果,酸性转化酶、中性转化酶的活性降低是蔗糖积累的必要前提,当酸性转化酶、中性转化酶活性的消失和SS、SPS活性升高时,开始积累蔗糖;淀粉酶的活性随着果实的迅速生长而上升,果实成熟前活性开始下降。
