摘    要:以云南3个主产区的小粒种咖啡(Coffea arabica L.)生豆为材料,通过分析同一品种在不同产地、环境条件下,咖啡生豆在感观、物理、化学和卫生指标上的差异,对其质量进行综合评价。结果表明:3个主产区的咖啡豆均达到国标标准和行业标准,为优质咖啡制品的加工原料;同一咖啡品种在3个不同产区的自然条件下种植,得到的咖啡豆在感观、物理、化学和卫生指标上存在一定程度的差异,且不同产区的咖啡豆均有各自的优点。

Abstract:Based on the comprehensive analysis and comparison of quality index in Coffea arabica L. collected from three major production areas in Yunnan. The results indicated that beans from three areas all meet the national standard and trade standard. Thus could be the manufactured materials of finest coffee. There were some differences in sensory, physical, chemical and hygienic index with the same coffee varieties growing in three different areas. Meanwhile beans from different production areas also had their respective virtues.
