| 摘 要： | 壳聚糖为甲壳素脱乙酰化的产物,其应用研究已取得较大进展,并且已有相当部分进入实用阶段或商品化阶段。壳聚糖的应用面广,其在生物学、医学领域以及食品、化妆品、环保、纺织、印染、造纸等工业上均有较大的应用价值。介绍了壳聚糖在生物、医学及食品等方面的应用。

| Abstract: | Chitosan was the de-acetyl chitin, its application study was made the big progress, and there were the very part of having entered practical or commercialize stage. The applied of the chitosan was very extensive, it was in biology, medical science realm and food, cosmet- ics, environmental protection, spin and weave, print to dye, deckle industry all contain bigger application value. At in the last few years, it was developed more quickly and applied foreground between extensive biology, medical science and food industry etc, and pushed to research with making use of it and develop the renewal, vaster and applied foreground. |
