摘    要:研究了干闷与湿闷对黄茶感官品质、茶汤与干茶色度、品质成分含量以及其抑制肝癌细胞HepG2增殖的影响。结果表明,湿闷工艺黄茶感官品质优于干闷工艺黄茶,茶汤与干茶色度均偏黄;生化成分检测结果显示,湿闷工艺黄茶中总儿茶素、酯型儿茶素、EGCG、ECG和叶绿素总量较干闷工艺黄茶显著降低,非酯型儿茶素、GC和EGC含量显著增加。MTT检测结果表明,干闷工艺和湿闷工艺黄茶都具有较强的体外抗肝癌活性。在闷黄温度和时间等因素相同条件下,湿闷工艺更有利于黄茶品质的形成,并可保持较强的体外抗肝癌活性。

Abstract:The effects of wet and dry yellowing process on the sensory quality,the color of dried tea and tea soup,the content of quality components of yellow tea and the inhibition of HepG2 cell proliferation were studied.The results showed that the sensory quality of yellow tea with wet yellowing process was better than that of yellow tea with dry yellowing process,and the color of both dry tea and tea soup was yellow.The results of biochemical components detection showed that the content of total catechin,ester catechin,(-)-Epigallocatechin gallate(EGCG),(-)-epicatechin gallate(ECG)and total chlorophyll in yellow tea with wet yellowing process were significantly lower than that of yellow tea with dry yellowing process,while the content of non-ester catechins,Gallocatechin(GC)and Epigallocatechin(EGC)were significantly increased.In addition,the MTT results showed that both wet and dry yellowing tea had strong anti-liver cancer activity in vitro.Under the same conditions of yellowing temperature and time,the wet yellowing process is more conducive to the formation of yellow tea quality,and can maintain strong anti-liver cancer activity in vitro.
