姬松茸酚类物质抗氧化活性的研究

摘    要:以茶多酚为对照,采用Fenton反应研究姬松茸酚对.OH的清除作用,并采用邻苯三酚自氧化法研究姬松茸酚对.O-2的清除作用。结果显示,在试验浓度范围内,姬松茸酚对.OH自由基具有一定的清除能力,对.O-2自由基的清除效果显著。同时,对姬松茸酚抗油脂自动氧化的能力进行了初步研究,姬松茸酚具有一定的抗油脂氧化活性。

Abstract:The effect on scavenging OH and O-2 of ABM polyphenol was studied by fenton reaction and Pyrogallol Autoxidation method respectively,which was compared with the effect of tea polyphenols. The results showed that ABM polyphenol could effectively scavenge OH and O-2. In addition,the anti-oxidation of ABM polyphenol was studied. The results showed that ABM polyphenol was effective in lengthening the oil to guarantee the quality.
