海南长臀鮠肌肉营养品质分析

摘    要:[目的]为了对长臀鮠(Cranoglanis bouderius) 的肌肉营养价值做出综合评判,对该种鱼的营养需要量的制定和计算提供依据,[方法]利用常规肌肉营养测试方法测定分析了长臀鮠的肌肉营养成分。[结果]长臀鮠肌肉(鲜样)中粗蛋白质量分数17.86%,粗脂肪质量分数14.27%,水分质量分数65.70%,灰分质量分数2.06%,碳水化合物质量分数0.11%。肌肉中含有18种氨基酸,总量为68.71%,其中8种人体必需氨基酸总量是26.84%,占氨基酸总量的39.06%;4种鲜味氨基酸总质量分数为26.66%;肌肉中含有16种脂肪酸,其中EPA与DHA质量分数分别为1.86%和2.85%。[结论]表明长臀鮠是营养价值较高,提供高能,肉味鲜美的高品质淡水鱼类。

Abstract:Nutritional components in the muscle of Cranoglanis bouderius were tested and analyzed with routine methods.Samples of 5 wild - cultured individuals were collected from Hainan province in January of 2007.The results showed that contents of crude protein,crude fat,moisture,ash and carbohydrates of fresh muscles were 17.86%,14.27%,65.70%,2.06% and 0.11% respectively .The composition of amino acids of muscle was 18 common amino acids and 8 essential amino acids for human needs.In dry sample the total content o...
