碱溶时间对大豆蛋白提取率和得率的影响

摘    要:目的]改进提取大豆蛋白质的工艺,取得碱溶时间的最大简单效应。方法]采用单因素分析方法研究提取大豆蛋白工艺中碱溶时间对大豆蛋白提取率及得率的简单效应。结果]在料水比1∶10(M∶V,g/ml)、酸沉pH值4.3、离心速度4 000 r/min、碱溶pH值9.5、碱溶时间60 min的条件下,平均蛋白提取率最高,为66.51%,与碱溶时间为50 min时的平均蛋白提取率65.81%差异不显著。同样条件下,平均蛋白得率最高,为29.74%,与碱溶时间为50 min时的平均蛋白得率29.42%差异不显著。结论]大豆蛋白质工艺提取中宜选择50 min作为碱溶时间的参数。

Abstract:Objective]The research aimed to improving the process of soybean protein extraction.Method]The simple effect of alkali soluble time on the extraction rate of soybean protein(ERSP) and yield rate of soybean protein(YRSP) were studied by single factor analysis method.Result]The results showed that(a) When the ratio of material over water was 1∶ 10,acid precipitation pH was 4.3,centrifugal speed was 4 000 r·min,alkali-soluble pH value was 9.5 and-the alkali-soluble was 60 min,the highest mean of ERSP was 66.51%.There was no significance difference between the ERSP with the alkali-soluble 60 min(66.51%) and 50 min(65.81%).(b) When in the same conditions,the highest mean of YRSP was 29.74%.There was no significance difference between the YRSP with the alkali-soluble 60 min(29.74%) and 50 min(29.42%).Conclusion]50 min was suggested in the process of soybean protein extraction.
