日粮棉秆比例对绵羊羊肉风味的影响

摘    要:为研究日粮中添加不同比例的棉秆对绵羊羊肉风味的影响,试验选取体重(21.91±5.16)kg的F1代断奶母羔30只,按其母代分为对照组和20%、30%、40%、50%棉秆添加组,每组6只,试验期250 d,其中预试期20 d,正式试验期230 d。试验结果表明:(1)棉秆添加组硫胺素含量与对照组之间相比无显著差异(P>0.05),30%组的硫胺素含量比40%组高61.54%,差异显著(P<0.05)。(2)50%组背最长肌中豆蔲酸的含量比对照组高50.00%,差异显著(P<0.05)。(3)40%组和50%组的棕榈酸含量分别比对照组高18.36%(P<0.01)和12.89%(P<0.05)。(4)20%、30%、40%和50%组的十七碳一烯酸分别比对照组低27.59%、20.69%、24.14%和27.59%,差异显著(P<0.05)。40%组的亚麻酸含量比对照组和20%添加组高32.56%和39.02%,差异显著(P<0.05)。(5)50%组饱和脂肪酸含量分别比对照组、20%组和30%组高8.37%、7.51%和8.42%,差异显著(P<0.05)。(6)50%组不饱和脂肪酸含量分别比对照组、20%组和30%组低8.25%、7.55%和8.33%,差异显著(P<0.05)。(7)50%组的单不饱和脂肪酸含量比20%组和30%组低11.16%和12.11%,差异显著(P<0.05);单不饱和脂肪酸/饱和脂肪酸比值:30%组>20%组>对照组>40%组>50%组,50%组的单不饱和脂肪酸/饱和脂肪酸比值分别比对照组、20%组和30%组低16.28%、17.24%和19.10%,差异显著(P<0.05)。由此可见,日粮中棉秆添加比例应低于40%,即添加比例为20%~30%对羊肉风味的影响较小,羊肉品质较好。

Abstract:In order to study the effect of cotton stalk ratio in diets on the meat flavor of sheep mutton.Thirty Weaned lambs of F1 generation weighing(21.91±5.16)kg were selected and divided into control group,20%,30%,40%and 50%cotton stalk adding groups according to their mother’s groups.Six sheep were in each group during 250 days experimental period.The results showed that:(1)The cotton stalk adding group and control group have no significant difference in thiamine content(P>0.05).The content of thiamine in30%group was 61.54%higher than 40%group(P<0.05).(2)The content of myristic acid in the longissimus muscle of 50%group was 50.00%higher than the control group(P<0.05).(3)The content of palmitic acid in 40%and 50%groups was 18.36%(P<0.01),12.89%(P<0.05)higher than the control group.(4)The content of heptadecanoic acid in 20%,30%,40%and 50%groups was 27.59%,20.69%,24.14%,27.59%(P<0.05)lower than the control group.The content of linolenic acid in 40%group was 32.56%,39.02%(P<0.05)higher than the control group.(5)The content of saturated fatty acid in 50%group was 8.37%,7.51%,8.42%(P<0.05)higher than the control group,20%group and 30%group.(6)The content of Unsaturated fatty acid in 50%group was 8.25%,7.55%,8.33%(P<0.05)lower than the control group,20%group and30%group.(7)The content of monounsaturated fatty acid in 50%group was 11.16%,12.11%(P<0.05)lower than the 20%group and 30%group.Monounsaturated fatty acid/saturated fatty acid in 50%group was16.28%,17.24%,19.10%(P<0.05)lower than the control group.The results suggested that the proportion of cotton stalk should be less than 40%in the diet.20%~30%,which had little effect on the flavor of mutton,and the quality of mutton was better.
