Abstract:The non thermal effects of a pulsed electrical field on microorganisms have attracted more and more research interests in recent years. The mechanisms and the influencing factors of non thermal effects in a pulsed electric field on microorganisms were reviewed and the current status of pasteurizing technique for fluid foods in a pulsed electric field throughout the world was introduced in this paper.
