合肥市蔬菜硝酸盐和亚硝酸盐污染现状评价

摘    要:本文研究了合肥市六个蔬菜市场出售的主要蔬菜品种中硝酸盐和亚硝酸盐的污染现状。结果表明:在被调查的5类17种蔬菜中,硝酸盐含量依次为叶菜类>豆类>根茎类>茄果类>瓜菜类,硝酸盐污染轻的占52.9%,污染中等的占35.3%,污染重的占11.8%;亚硝酸盐含量普遍较低,均未超标, 含量依次为叶菜类>豆类>茄果类>瓜菜类>根茎类;同一蔬菜,叶片中硝酸盐、亚硝酸盐含量高于叶柄中。

Abstract:The contamination level of nitrate and nitrite of main vegetables collected fromsix vegetable markets in Hefei was investigated and evaluated The results showed that The contents of nitrate in vegetables varied significantly with different kinds of vegetables,i e ,leaf vegetables>legumes>root vegetables>egg plants>gourds,52 9 percent of the investigated vegetables were contaminated slightly,35 3 percent of the vegetables were contaminated moderately and 11 8 percent of them were contaminated heavily The contents of nitrite in all investigated vegetables were lower than the hygienical criterion and the order of contents of nitrite was leaf vegetables>legumes> egg plants>gourds >root vegetables ;The contents of nitrate and nitrite in leaves of same vegetable were higher than that was in petioles
