成熟度对红花大金元中性致香物质和感官质量影响

摘    要:为明确红云红河保山基地红花大金元品种不同成熟度对烟叶中性致香物质和感官质量的影响,为保山烟区该品种质量提升提供适宜采收成熟度参考。对比了3个田间采收成熟度处理烤后烟叶的中性致香物质和感官质量。结果表明:随着红花大金元烟叶田间采收成熟度的提升,大部分香气前体物降解产物及特征致香成分含量增加,各致香成分变化的幅度不一致。结合感官质量评价结果,烟叶大田采收成熟度标准为下部叶,打顶后14天左右,烟叶叶面黄绿色面积50%~60%,主脉变白1/3以上。中部叶,打顶后34天左右,烟叶叶面黄绿色面积70%~80%,主脉变白2/3以上。上部叶,打顶后48-51天左右,烟叶叶面黄绿色面积80%以上,主脉变白3/4以上。

Effect of maturity on neutral aromatic substances and sensory quality of Safflower Dajinyuan

Abstract:In order to clarify the effects of different maturity of Honghe Dajinyuan varieties on the neutral aromatic substances and sensory quality of tobacco leaves in Baoshan Base of Hongyun Honghe, and to provide reference for the appropriate harvesting maturity for the quality improvement of this variety in Baoshan tobacco area. The neutral-flavoring substances and sensory quality of cured tobacco leaves from three fields were compared. The results showed as follows: With the improvement of harvest maturity of Honghua Dajinyuan tobacco in the field, the contents of degradation products and characteristic aroma components of most aroma precursors increased, and the variation amplitude of each aroma component was inconsistent. Combined with the results of sensory quality evaluation, the standard of maturity of tobacco leaves in the field was lower leaves. About 14 days after topping, the yellow-green area of leaf surface of tobacco leaves was 50% ~ 60%, and the main veins turned white by more than 1/3. In the middle leaves, about 34 days after topping, the yellow-green area of leaf surface of tobacco leaves was 70% ~ 80%, and the main veins turned white by more than 2/3. On the upper leaves, about 48-51 days after topping, the yellow-green area of leaf surface of tobacco leaves was more than 80%, and the main veins turned white by more than 3/4.
