摘    要:【目的】为了解采收时间对贵州主栽蓝莓果实品质的影响情况,从而为主栽蓝莓品种的栽培生产提供理论依据。【方法】以不同时间采收的贵州主产区3个产地(碧波、龙奔、小河边)的2个主栽蓝莓品种’灿烂’和’粉蓝’的果实为研究对象,对其外观形态(单果质量、果型指数、色泽等指标)、理化性质(出汁率、果汁pH值、含水量等指标)、食用品质(可滴定酸、总可溶性固形物、还原糖、固酸比、糖酸比等指标)及营养成分(花色苷、蛋白质、总酚、总黄酮)进行了测定,并采用主成分分析方法对变异系数大于10%的指标进行了降维分析,根据其主成分得分计算其综合评分并进行排序。【结果】测定结果表明:采收时间对不同产地和不同品种蓝莓果实的外观形态、理化性质、食用品质及营养成分的影响程度均存在差异。主成分分析结果表明:3个产地的’灿烂’和小河边的’粉蓝’的尾果果实品质的综合评分均较高,龙奔的’粉蓝’头茬果果实品质的综合评分最高;而3个产地的’灿烂’和龙奔的’粉蓝’的中间果果实品质的综合评分均最低,小河边的’粉蓝’头茬果果实品质的综合评分最低。【结论】采收时间对不同产地和不同品种蓝莓果实品质的影响存在较大差异,因此建议,应按品种、采收时间及产地分类分批进行采收、贮藏、鲜销及加工,以确保鲜销果实及加工用原料果实品质的稳定性。

Abstract:【Objective】To learn effects of harvest date on fruit quality of main blueberry cultivars in Guizhou,and to provide a theoretical basis for cultivation and production of main blueberry cultivars.【Method】Two main blueberry cultivars of‘Bright Well’and‘Powderblue’were used as research objects in three production areas(Bibo,Longben and Riverside),and they were harvested at different dates.Appearance(single fruit mass,fruit shape index,color,and so on),physical-chemical properties(juice yield,juice pH value,water content,and so on),edible quality(titratable acid,total soluble solids,reducing sugar,solid-acid ratio,sugar-acid ratio,and so on)and nutritional components(anthocyanin,protein,total phenols and total flavonoid)were analyzed,and the comprehensive scores were calculated by principal component analysis.【Result】The results show that harvest date had different effects on appearance,physical-chemical properties,edible quality and nutritional components of blueberry fruit from different cultivars and production areas.The results of principal component analysis show that comprehensive scores of tail fruits of‘Bright Well’and‘Powderblue’from Riverside are higher,and that of the first stubble of‘Powderblue’from Longben is the highest.Comprehensive scores of intermediate fruits of‘Bright Well’and‘Powderblue’from Longben are lowest,while that of the first stubble of‘Powderblue’from Riverside is the lowest.【Conclusion】harvest date has different effects on quality of blueberry fruits from different cultivars and production areas.To ensure stability of fresh fruit and raw materials for intensive processing,it is suggested that fresh fruit should be stored according to cultivars,harvest dates and production areas.
