Abstract:General nutritional composition,free amino acids and fatty acids in muscles of transgenic T.albonubes with red fluorescent protein and non-transgenic full-siblings were analyzed.Results showed that the content of moisture,crude protein and crude ash of transgenic T.albonubes were slightly higher than those of non-transgenic T.albonubes,the crude fat showed contrary result,but there was no significant difference between them(P>0.05).Free amino acid content was measured by gas chromatography in muscles of transgenic and non-transgenic T.albonubes.Sixteen kinds of free standard amino acids were identified in the muscle samples and the total content of transgenic and non-transgenic T.albonubes were 262.3 mg/100 g and 492 mg/100 g,total essential amino acids 161.6 mg/100 g and 314.8 mg/100 g,the delicious amino acid content 74.3 mg/100 g and 127.8 mg/100 g,respectively.Fatty acid composition and content were measured by GC/MS area normalization method in muscles of transgenic and non-transgenic T.albonubes.Results showed that 28 fatty acids were found in the muscle samples and saturated fatty acid content of transgenic and non-transgenic T.albonubes were 29.47% and 31.59%,monounsaturated fatty acid content 39.14% and 42.45%,polyunsaturated fatty acid content 31.40% and 25.96%,respectively.In summary,the insertion and expression of foreign red flurorescent protein genes had no significant effect on muscle nutrients,free amino acid and fatty acid composition in transgenic T.albonubes.
