鸡蛋清洁前后蛋壳表面沙门氏菌污染检测

摘    要:为了解使用鸡蛋清洁技术能否减少蛋壳表面沙门氏菌污染,取清洁前后的鸡蛋各60枚,分别置于保鲜袋中相互隔离。用无菌棉拭子采集蛋壳表面细菌,经前增菌和选择性增菌后,提取细菌DNA进行PCR检测。清洁后的鸡蛋表面未检出沙门氏菌,未清洁的鸡蛋表面检出沙门氏菌,进一步检测,均不是肠炎沙门氏菌和伤寒沙门氏菌。说明鸡蛋清洁技术可以有效减少蛋壳表面沙门氏菌污染。

Abstract:To better understand the role of egg coating technique,coated and uncoated eggs,60 respectively,are sampled,each in a freshness protection package.Bacterium is sampled from each egg by sterile swab,and then,DNA of all samples is extracted for PCR-based detection after pre-enrichment and selected enrichment of bacterium.Salmonellas are detected on the surface of uncoated eggs,but no coated eggs,and further detection proves them neither Salmonella enteritidis nor Salmonella typhi.The technique of egg coating can effectively reduce the Salmonella contamination on the surface of eggshell.
