| 摘 要： | 膳食纤维对人体健康具有重要的作用，挤压加工膳食纤维具有突出的优点。为此，阐述了膳食纤维在挤压过程中的变化机理，介绍了挤压加工膳食纤维的研究进展，并对其发展前景进行了展望。
