摘    要:按肌肉占体躯各段重和左半肌肉重比例,研究了前中后躯肌肉、四肌群和29块肌肉生长特点和种间差异。结果表明,1.猪前、中和后躯肌肉占体躯各段重比例,后躯最多,中躯最少,前躯肌肉处于中间;2.四肌群总重占左半胴总重24~31%;3.各猪种前肢肌、肩带肌和后肢高低排列顺位大致相同;4.各猪种肌肉生长存在明显差异;5.部分肌肉与总量有明显关系,根据某一块肌肉可估测肌肉总量,眼肌面积、腿臀比和腿臀围是估测肌肉生产力的主要项目,也是瘦肉型猪选种和评定的重要指标。

Abstract:Comparisons wsrs made among Min pigs, Landraee, Duroc×Min, Landrace×Min and Landrace×(Duroc×Min) on: 1. hindquarter, forequarter and loin muscles relative to half-carcass weight and was found to rank in the above order, although the forequarter muscle was the heaviest relative to total carcass muscle; 2. when partitioned according to muscle groups, the hind leg was the heaviest with the shoulder, foreleg and longissimus decreasing in that order. These four groups accounted for 24~31% of the carcass weight; 3. differences were obvious on muscle to carcass ratio, with the Min the lowest and Landrace the highest, twoway cross in between and threeway cross slightly higher; 4. in terms of percentages of muscle group to carcass total muscle, Min surpassed the Landraee in the front half of the half-carcass but inferior in the rear half with the crossbreds in between; 5. some individual muscles were closely correlated to total weight. Eye muscle area, ham ratio and ham circumference could be used as criteria to predict muscle mass and as indices for lean-type swine selection.
