不同山体红松松籽油脂肪酸组成及抗氧化活性

摘    要:对孟家岗林场6个山体红松松籽油的基本理化性质、脂肪酸组成和体外抗氧化活性进行研究,并比较它们之间的差异;测定红松松籽油碘值、酸值、皂化值,用气相色谱法测定脂肪酸组成,用1,1-二苯基-2-三硝基苯肼(1,1-diphenyl-2-picrylhydrazyl,DPPH)实验、超氧阴离子自由基清除实验分析其体外抗氧化能力。结果表明:不同山体红松松籽油的基本特性之间存在显著差异,红松松籽油的碘值为1.45~1.48 g/g(以I2计),酸值为0.53~0.86 mg/g(以KOH计),皂化值为179~181 mg/g(以KOH计)。红松松籽油中的脂肪酸组成以亚油酸质量分数最高,为43.852%~46.577%;其次是油酸,为27.034%~30.363%;α-亚麻酸为13.686%~14.692%。其不饱和脂肪酸质量分数为88.660%~88.303%。6个山体的红松松籽均有较强的抗氧化活性,且随着样品质量浓度增大,清除能力增强。红松松籽油DPPH自由基的IC50为0.054~0.071 g/m L,超氧阴离子自由基IC50为0.061~0.081 g/m L。

Abstract:The pinenut oils from six mountains in Mengjiagang Forestry Center were comparatively analyzed for their physicochemical properties, fatty acid composition and antioxidant activity.Iodine value, acid value, saponification value were investigated, the fatty acid composition was measured by gas chromatography (GC), the antioxidant activity was tested by 1,1-Biphenyl-2-picryhydrazyl (DPPH) radical scavenging and superoxide anion free radical scavenging.There were significant differences in the physicochemical properties from different mountains, iodine value was 145-148g/100g I2, acid value was 0.53-0.86mg/g KOH, and saponification value was 179-181mg/g KOH.Linoleic acid (27.034%-30.363%) was the most abundant one in each hazelnut variety followed by oleic acid (27.034%-30.363%) and α-linolenic acid (13.686%-14.692%).The contents of unsaturated fatty acid was in 88.660%-88.303%.All pinenut oils had strong scavenging activity against DPPH and superoxide anion free radical scavenging, with the increase of sample concentration, the scavenging ability was enhanced.The IC50 was 0.054-0.071g/mL in DPPH free radical scavenging assay, and the IC50 was 0.061-0.081g/mL in superoxide anion free radical scavenging assay.
