摘    要:为了探讨脂肪沉积与肉嫩度的关系,通过分析近几年肌内脂肪方面的研究,综述了脂肪含量、脂肪沉积对肉品质的影响,并对该领域的研究前景提出展望,可为提供高质量的肉品提出理论依据并作为参考。

Abstract:The aim of this paper was to summarise the relationship between intramuscular fat (IMF) and meat tnederness.The review mainly showed the recent works about intramuscular fat deposition in livestock.The lipids content and intramuscular fat deposition were discussed and the factors may regulate IMF deposition were also reviewed.Future research should be focused on the improvement of meat tenderness by controlling fat deposition in muscle.
