摘    要:目的]为开发新型天然防腐剂提供依据。方法]以山楂为材料,枯草芽孢杆菌、酿酒酵母和大肠杆菌为供试菌种,采用传统水煎法提取山楂中的有效成分,并向10、2ID、30、40、50、60、70、80、90、100出提取物中分别加入10nagNisin制成复配物,测定复配物对3种供试菌的抑菌效果。结果]Nisin的效价为994.5IU/mg,当山楂提取物加入量为50出时,效价达到1531IU/mg,为Nisin的1.53倍,但提取物加入量超过50出时,效价下降。复配物对3种供试茵的抑菌效果好于单独使用山楂提取物和Nisin。结论]山楂提取物与Nisin的复配物时3种供试菌均有较好的抑制效果,且Nisin与山楂提取物的最佳复配比例为1:5(mg:μl)。

Abstract:Objective] The aim was to provide the basis for developing new types of natural preservative.Method] With hawkthorn as the material and Bacillus Subtilis,Saccharomyces cerevisiae and Escherichia coli as the tested strains,the effective components in hawkthorn were extracted with traditional decoction method.And then adding 10 mg Nisin into 10,20,30,40,50,60,70,80,90,100 μl extracts resp.to prepare the compound of nisin and hawkthorn extracts.The antimicrobial activities of different compounds on 3 kinds of tested strains were measured.Result] The titer of Nisin was 994.5 IU/mg.When 50 μl hawkthorn extracts was added,the titer reached 1 531 IU/mg,being 1.53 times of that of Nisin. But when addition amount of the extracts was more than 50 μl,the titer decreased.The antimicrobial activities of compounds on 3 kinds of tested strains were better than those of single use of hawkthorn extracts and Nisin.Conclusion] The compounds of hawkthorn extracts and Nisin had good antimicrobial activity on 3 kinds of tested strains and the optimal compound proportion of Nisin and hawkthorn extracts was 1∶5(mg∶μl).
