商品猪胴体性状分析及瘦肉率最优预测模型筛选研究

摘    要:为在生猪屠宰线上较快地预知胴体瘦肉率,并按照不同瘦肉率对猪胴体划分等级,以实现优质优价的收购体系,选择5~8月龄不同类型阉割商品猪389头,分别测其瘦肉率、热胴体重、背膘厚度等指标,以瘦肉率为因变量,其他指标为自变量,采用SAS8.2软件建立了预测商品猪胴体瘦肉率不同变量的回归方程.结果表明:多元线性方程y=56.303 0-0.115 7x1-0.514 5x7 0.316 6x10(R2=0.87,RMSE=2.298 77)能较好拟合商品猪的胴体瘦肉率,腰荐背膘厚(x7)、M(指臀中肌末端到脊髓管边缘处距离,x10)被确定为商品猪胴体分级时需要直尺测量的2个指标.

Abstract:The study was conducted to quickly predict carcass lean-percentage of swine on the slaughtering line,to classify them based on their lean percentage and to realize the policy of selling good-quality pork at a good price.389 samples aged from 5 months to 8 months were selected.Carcass lean-percentage(y) calibration equation on swine and indexes measured for swine carcass grading were assessed.The usual predictors were hot carcass weight,backfat of different parts and other characteristics measured on each carcass with ruler.By commercial cutting,multiple regression analysis of dissectible lean meat on linear form based on the variables with different indexes was performed by SAS(SAS version 8.2).The results suggested that the thirteenth equation: y=56.303 0-0.115 7 x1-0.514 5 x7+0.316 6x10 is the best multiple linear regression prediction model,in the model Adj.R2 is 0.87 and RMSE is 2.298 77.Backfat between sacrum & lumbar vertebra(x7) and M(M is the distance between the end of muscular gluteus and the edge of spinal cord canal,x10) will be measured for swine carcass grading in the future.
