| 摘 要： | 介绍了膳食纤维的理化特性,包括吸水溶涨作用、梯度黏合作用、离子交换作用、机械隔离作用、网孔吸附作用及菌群调节作用,并探讨了其对人体的保健作用,包括预防结肠癌、心血管疾病和糖尿病的作用及减肥和防治便秘的作用。
