摘    要:对30个糙米品种的γ-氨基丁酸(GABA)含量及谷氨酸脱羧酶(GAD)活性进行了变异度分析和聚类分析,结果表明:不同品种糙米原料中GABA含量和GAD活性存在明显的差异,变异系数分别为51.7%和44.9%;30个糙米品种可分为3类,其中第Ⅰ类包括8个糯稻品种,其GABA含量及GAD活性均较高,均值分别为23.8 mg/100g和6.3 u/g;第Ⅱ类包括10个粳稻和2个糯稻品种,其GAD活性较高;第Ⅲ类包括10个籼稻品种,其GABA含量和GAD活性均较低。

Abstract:Variation and cluster analyses were performed to test γ-aminmbutyric acid(GABA) content and gultamate decarboxylase(GAD) activity of 30 brown rice cultivars.It was shown that GABA content and GAD activity of different brown rice cultivars were significantly different,the variation coefficient being 51.7% and 44.9% respectively.30 cultivars could be classified into three groups.The GABA content and GAD activity in groupⅠ which included 8 glutinous rice cultivars were high,the average value being 23.8 mg/100g and 6.3 u/g respectively.Group Ⅱ which included 10 japonica and 2 glutinous rice cultivars had moderate GABA content and GAD activity.Group Ⅲ which included 10 indica rice cultivars had relatively poor GABA content and GAD activity.
