摘    要:研究了A-型保鲜剂对垫江白柚汁胞粒化影响关系密切的SOD,POD以及纤维素酶活性变化情况。结果显示:A-型保鲜剂可使果皮SOD酶活性下降,果肉SOD酶活性上升;使果皮、果肉POD酶活性均呈上升趋势;另外可降低贮藏中、前期纤维素酶活性,从而减轻垫江白柚汁胞粒化发生的程度。

Abstract:Newly harvested Dianjiang pummelo (Citrus maxima) fruits were immersed in A-medication solution, a freshness-preserving agent, for 2 minutes before storage and samples were taken at regular intervals for biochemical determination. A-medication decreased SOD activity in the peel of the fruit and increased the activity of SOD in the pulp and POD in both the peel and the pulp. During the early and the middle storage periods, A-medication also suppressed the activity of cellulase in the fruit, and thus reduced the incidence of pulp granulation.
