摘    要:以果实质地和贮藏性存在明显差异的黄花、湘南梨为试材,对贮藏期果实硬度、Ca^2 、果胶、丙二醛、乙烯动态进行了研究。研究结果表明:黄花在贮藏前期Ca^2 含量高且呈迅速下降的趋势,湘南在贮藏初期Ca^2 含量低但相对稳定,在贮藏末期有一个迅速上升的过程;两品种果实硬度、原果胶含量逐渐降低,水溶性果胶、丙二醛(MDA)含量逐渐上升,但黄花在果实贮藏初期的变化幅度大,而湘南在贮藏后期变化幅度大;两品种在贮藏的第10天左右出现乙烯峰值,黄花的峰值为湘南的3.04倍。还对造成两品种质地及贮藏性差异的原因进行了讨论。

Abstract:Huanghua and Xiangnan that were significantly different in storage and texture trait were used to investigate their firmness, and Ca 2+, pectin, MDA and ethylene content during storage. The results showed that Ca 2+content of Huanghua was high and decreased rapidly in early storage stage, while that of Xiangnan was relatively low and stable, and it increased quickly at the end of storage stage; fruit firmness and proto pectin content of the two cultivars decreased gradually, while the content of water soluble pectin and MDA increased, but when Huanghua changed dramatically in early storage stage, while Xiangnan in late storage stage. The ethylene peaks of the two cultivars occurred on the tenth day during storage, and the peak value of ethylene in Huanghua was 3.04 times as large as that of Xiangnan. The reason leading to the different texture and storage trait was discussed in the paper.
