摘    要:酚二磺酸法是测定蔬菜中硝酸盐含量的常用方法,但是,该方法的应用受测定条件的制约且操作繁杂。为了快速、准确地测定蔬菜中的硝酸盐含量,本研究探讨了菜浆的制备方法、提取方法、待测溶液制备方法、反应条件对叶菜类蔬菜中硝酸盐测定的影响。结果表明:(1)组织捣碎机法适用于制备菜浆,所获得的菜浆硝酸盐含量与研磨法制备的量相当;(2)常温水提法可很好地提取硝酸盐,其提取量与煮沸法的无显著差异;(3)过滤法与离心分离法获得的待测液中硝酸盐含量无显著差异;(4)在干燥条件下冷却干燥后的待测物及进行显色可显著提高测定的准确度。

Abstract:In order to determine the content of nitrate in foliar vegetable precisely, the study discussed the way of preparing vegetable slurry, the quantity of joining the matter of getting rid of hydronium, the way of extracting nitrate, the preparation way of treating liquid, and the effect of the condition of reaction between phenol-two-sulfonic acid and nitrate on the determination of nitrate. The result indicated that there was no prominent difference in using mortar rubbing and tissue-triturator treating vegetable. Deionized water in normal temperature could determine nitrate very well, and the quantity of nitrate determined was no such prominent difference as that of boiling in electric furnace. The impurity in vegetable slurry disturbed the determination of nitrate and reduced the result of determination. Adding some flocculant to the vegetable slurry could eliminate the disturbance. After extracting nitrate, there was no prominent difference on the quantity of nitrate determined between the filtrating by filter paper and the leaving by centrifuge. Treating liquid was evaporated and dried, then refrigerated and reacted in desiccator, by which could increase the accuracy of nitrate determination efficiently.
