籽瓜皮果胶的提取工艺研究

摘    要:为探究提取分离新疆籽瓜皮中果胶的最佳工艺,采用酸提醇析法探讨了原料预处理,萃取剂的种类、浓度和加入量,萃取温度、时间和浓缩比例等因素对果胶产率的影响。在此基础上,运用正交试验对萃取工艺进一步优化。确定最佳工艺条件为:籽瓜皮以细渣状沸水浴灭酶3min,萃取液为硫酸,萃取液pH值为1.5,料液比为1∶15,萃取温度为90℃,萃取次数为2,萃取时间分别为2.5h和1h,浓缩比例为1/4,冷却后经1.5倍的乙醇沉淀,果胶产率为19.5%。

Abstract:In this paper,the best technology of extraction pectin from seed melon of Xinjiang was discussed. The influence factors include the pretreatment of raw material,the kind of acid,the concentration and the amount of extractant,the temperature and time of extraction and the concentration ratio. The optimal processing conditions were obtained by orthogonal experiment as follows:destroying enzyme in boiling water about 3 min,H2SO4 as extractant,carrying on two extractions,the pH value was 1.5,the ratio of solid∶liquid was 1∶15,the acid extraction temperature was 90 ℃,extracting time was 2.5 h and 1 h, multiple of concentration was 1/4,cooling,the ethanol amount was 1.5,the extracting efficiency of pectin was 19.5%.
