桑籽皮多酚的抗氧化活性研究

摘    要:通过测定还原力、抗脂质过氧化能力,对二苯代苦味酰肼基DPPH自由基的清除能力来评价桑籽皮多酚的抗氧化活性。结果表明,桑籽皮多酚的还原力强于对照品茶多酚、单宁酸和抗坏血酸;抗脂质过氧化能力强于单宁酸和茶多酚;对DPPH自由基的清除能力与茶多酚相当,优于抗坏血酸和单宁酸。桑籽皮多酚是一种有效的天然抗氧化剂。

Abstract:By measuring the reduction of capacity,Lipid peroxidation,scavenging effects on DPPH freedom radical to evaluate antioxidant activity of the polyphenols from mulberry seeds skin.The results show that the polyphenol extracted from the mulberry seeds skin has stronger reducing capacity than tea polyphenols,tannic acid and ascorbic acid.It also has stronger lipid peroxidation than tannic acid and tea polyphenols.It has the quite elimination ability to free radical,surpasses the antiscorbutic acid and the tanni...
