葡萄干酿制白葡萄酒生产工艺研究

摘    要:以葡萄干为原料研制出的葡萄酒为白葡萄酒,具有白葡萄酒的基本特征,如清新淡雅、协调爽口等。研制了具有营养保健作用葡萄干酿制的白葡萄酒。研究了葡萄干的处理、葡萄汁的制备、白葡萄酒的生产工艺、质量要求,探讨了影响葡萄酒质量的因素。
