| 摘 要： | ０℃下，香椿芽采后的呼吸强度很快下降；在其贮藏过程中，总叶绿素（ＴＣＨＬ）、叶绿素ａ（ＣＨＬａ）、叶绿素ｂ（ＣＨＬｂ）和Ｖｃ含量明显减少，过氧化物酶ＰＯＤ活性显著增强。贮藏３０ｄ，总叶绿素含量减少３８．９％，Ｖｃ减少９５．４％，ＰＯＤ活性提高４．５倍，无纤维化和落叶现象发生。

| Abstract: | At 0℃, the of resiration of chinese toon (Toona sinensis Roem) bud (CTB) decreased rapidly after harvest. The contents of total chlorophyll (TCHL),chlorophyll a (CHLa), chlorophyll b (CHLb) and Vc decreased distinctly and the peroxidase (POD) activity increased markedly during the storage. After 30 days storage the contents of TCHLL and Vc decreased by 38.9% and 95.4% respectively, the activety of POD mcreased by 4.5 time. However, the phenomena of fiberization and abscission in CTB did not occure. |
