| 摘 要： | 在分析总结逆境生理和果蔬采后生理与贮藏实践经验的基础上，提出了贮藏中逆境效应及利用的概念，即根据果蔬反应，利用逆境条件控制其生长发育，达到贮藏保鲜的目的，并以此指导发展新的贮藏方法和技术。

| Abstract: | Based on analysing and summarizing the studies of stress physiology, postharvest physiology and experience of storage practice of fruits and vegetables a new concept was advanced. It is suggested that storage and keeping fresh of fruits and vegetables may be regarded as the results from control and inhibition of their growth and development by stress-conditions. Therefore, according to the response of fruits and vegetables to stress-conditions the storage techniques will be improved by different combinations and coordination of various stress-conditions. |
