摘    要:对2007年6~8月库存的不同等级小麦粉的粮温、脂肪酸值进行跟踪测定,系统的探讨脂肪酸值与粮温、储存时间、不同等级及水分含量的关系。确定了影响小麦粉脂肪酸值增加的主要因素及规律。

Abstract:It took tracing inspection on temperature and fatty acid value of different grades of wheat powder stored from June to August in 2007,investigated systematically the relation between fatty acid value and grain temperature,storage time,grades and moisture content,and determined the main factors and rules which affected fatty acid value rising of wheat powder.
