ω-3PUFA在蛋黄中的富集效应及对蛋品质的影响

摘    要:试验共设4个组,对照组含3%菜油,试验组分别含2%菜油+1%鱼油、1%菜油+2%鱼油和3%鱼油,研究日粮不同水平ω-3PUFA在蛋黄中的富集效应及对蛋品质的影响。各试验组ω-3PUFA在蛋黄中的沉积量随鱼油添加时间延长而显著提高(P<0.01),第8周ALA、EPA和DHA沉积量分别达到2.96%、3.2%和2.9%,以2%鱼油添加组升高幅度最大。蛋黄中TC含量下降,第8周各组蛋黄中胆固醇含量比第2周分别降低2.30%、4.38%、1.24%和1.88%,同期各组内差异不显著。各试验组蛋黄TG含量变化不大,MDA含量均不同程度有所提高。此外,添加鱼油提高了蛋壳强度和蛋壳厚度,蛋重下降。

Abstract:In this experiment,444 brown laying hens were alloted to 4 groups, the control group containing 3% RO(rap oil) and the other three groups containing 2% RO+1% FO (fish oil), 1% RO +2% FO and 3% FO respectively, to study the effect of different ratio of rap oil and fish oil on yolk accumulation and egg qualities. The deposition of ω-3 PUFA in yolk was improved with the supplementation of dietary fish oil level (P < 0.01), which ALA, EPA and DHA deposition in the eighth week were achieved at 2.96%, 3.2% and 2.9% respectively in yolk and 2% FO group has the largest extent of deposition. TC content of yolk in the eighth week was dropped significantly by 2.3%, 4.38%, 1.24% and 1.88% compared with the second week, and there was no significant difference between each group with TG content in yolk. MDA was increased by different extent in the three treatments. Moreover, it increased egg shell intensity and thickness whereas lessened in egg weight.
