黑米花色素苷提取工艺的研究

摘    要:目的]为合理开发黑米提供科学依据。方法]以黑米为原料,通过单因素试验和正交试验,对黑米花色素苷的提取工艺进行了研究。结果]试验确定了黑米花色素苷提取的最佳条件,即75%的乙醇溶液,按1∶8的料液比,浸提温度30℃,浸提时间30 min,在此条件下提取2次,黑米花色素苷的浸提率可达到94.40%。结论]在此工艺条件下提取黑米花色素苷效果较好,而且可节约成本。

Research on the Extraction of the Anthocyanin from Black Kerneled Rice
Abstract:Objective] The scientific basis for the rational development of black kerneled rice was provided through the experiment.Method] The extraction of anthocyanin from black kerneled rice was studied with the orthogonal test of single-factor.Results] The best extracting condition of anthocyanin was determined: ethanol solution,75%,ratio of liquid to raw material,1∶8;extraction temperature,30 ℃;extracting time,30 min;and the extraction rate of anthocyanin was up to 94.4% after twice time extraction under the condition.Conclusion] The processing condition resulted in the good extracting efficiency of anthocyanin from black kerneled rice and low cost.
