山药粉加工工艺的研究

摘    要:以山药为原料,研究了喷雾干燥法、热风干燥法生产山药粉的加工工艺,对影响喷雾干燥、热风干燥效果和山药粉产品品质的因素进行了考察。通过对山药粉喷雾干燥、热风干燥出粉率和产品品质影响最大的几个主要指标的单因素试验,选取了几个主要影响因素进行正交试验设计。结果表明,喷雾干燥加工制取的山药粉品质比热风干燥制取的较好,喷雾干燥条件为进口温度170℃,出口温度75℃。

Abstract:Taking Yam as raw material,the processing of potato powder is studied by spray drying,hot air drying,the influences of spray drying,hot air drying effect and potato powder product quality factors are studied.By single-factor experiment,a few main factors are selected to design the orthogonal experimental,results show that preparation of spray-drying process potato powder quality than hot air drying system to take the good,the inlet temperature of spray drying conditions are 170 ℃,the outlet temperature is 75 ℃.
