| 摘 要： | 大豆是一种重要的经济作物 ,是我国当前农业生产与食品加工重点发展目标之一。文章较系统地介绍大豆中大豆蛋白的化学组成、营养价值、保健作用等近况 ,并综述了国外大豆蛋白的生产品种、加工产品的品质、应用以及美国的大豆蛋白市场发展情况 ,据此提出我国未来需要重点发展的大豆蛋白产品

| Abstract: | Soybean is one of economic crops in the world and also to be key developing object both for farm planting and for food processing in China today.In this paper,chemical composition,nutrition value and health benefit of soy protein are presented detailed.Product forms of soy protein,together with product characterstics,product application and sale development in US market,are also introduced or compared.Some soy protein products are suggested to be exploited in the future in food industry based on the development history of soy protein production in US and Europe. |
