大眼鳜和斑鳜肌肉营养成分分析

摘    要:目的]分析大眼鳜和斑鳜肌肉的营养成分。方法]以翘嘴鳜为对照,对大眼鳜和斑鳜肌肉蛋白质含量、含水量、脂肪含量、脂肪酸含量、氨基酸含量进行分析。结果]大眼鳜和斑鳜肌肉蛋白质含量分别为18.71%和18.99%,含水量分别为76.06%和76.16%,肌肉中脂肪含量虽然不高,但其不饱和脂肪酸含量较高,都在20%以上,特别是具有丰富的EPA和DHA,不饱和脂肪酸的含量高于饱和脂肪酸含量;肌肉中蛋白质含量丰富,氨基酸含量高,能补充人体必需氨基酸,其鲜味氨基酸的含量也非常丰富。结论]大眼鳜和斑鳜具有较高的营养价值和巨大的市场潜力,是值得人工养殖的鳜鱼品种。

Analysis on Nutritional Components in Muscle of Siniperca kneri and Siniperca scherzri
Abstract:Objective]The aim was to analyze the nutritional components in muscle of Siniperca kneri and Siniperca scherzri.Method]With Siniperca chuatsi as the control,the protein content,water content,fat content,fatty acid content and the amino acid in the muscle of S.kneri and S.scherzri were analyzed.Result]The protein content in the muscle of S.kneri and S.scherzri were 18.71% and 18.99%,resp.,and the water content were 76.06% and 76.16%,resp.Though the fat content in muscle was not high,their unsaturated fatty acid content was higher,being above 20%,especially they had abundant EPA and DHA,and the unsaturated fatty acid content was higher than saturated fatty acid content.The protein content was rich and the amino acid content was high in the muscle,which could supply body essential amino acid content.Their delicious amino acid content was very rich in the muscle,too.Conclusion] S.kneri and S.scherzri had higher nutritive value and huge market potential,and they were mandarin fish species being worth to artificial culture.
