| 摘 要： | 甘薯属抗旱耐瘠作物,其块根中富含淀粉、粘液蛋白、脱氢表雄酮、准女性激素、维生素A、维生素B2、维生素C等物质,具有很高的开发利用价值.文章综述了甘薯在保健食品、菜用、加工业、天然色素合成、观赏及生物能源等领域的应用及研究进展,并对其发展前景作了展望,为进一步提高甘薯的研发与产业化水平提供参考.

| Abstract: | Sweet potato belongs to drought-resistant crops.Because its root is rich in starch,protein mucus,dehydroepiandrosterone,quasi-female hormone,vitamin A,vitamin B2,vitamin C etc,its development value is very high.To further improve the sweet potato research,development and provide some references to its industrialization,the advance of sweet potato in healthy food products,vegetable,industry,natural pigment synthesis,and the fields of ornament and bio-energy research were summarized. |
