| 摘 要： | 绿茶中的儿茶素 ,是决定茶汤口感、颜色的主体成分 ,因而是影响茶叶质量的关键性物质之一。为了适应绿茶品质鉴定的需要 ,有必要建立一个方便、快速测定混合儿茶素含量的方法。通过实验比较 ,利用儿茶素与磷钼酸的显色反应 ,可比较快速地测出茶叶中混合儿茶素的含量。

| Abstract: | The cyanidol is principal part in the tea-leaves and decides the quality of the tea.To making an appraisal of the tea,it needs an effective method quick testing for the total amount of cyanidol in the tea-leaves.Utilizing that cyanidol react with phosphomolybdic acid can quick test the amount. |
