低酚棉子蛋白乳化容量的研究

摘    要:本文以低酚棉子蛋白为研究材料,采用电导法测定低酚棉子蛋白乳化油脂时的乳化容量。结果表明,低酚棉子蛋白在乳化时其耗油量与蛋白质含量呈线性相关.适合方程y=a+bx,线性回归系数b的值即为低酚棉子蛋白的乳化容量。中性蛋白酶水解低酚棉子蛋白,发现其乳化性能的变化为,酶水解使非贮存蛋白的乳化容量呈下降趋势;酶水解使贮存蛋白在水中的溶解度显著增加,其乳化容量先下降而后又趋上升。

Abstract:Glandless cottonseed protein was used to determine emulsifying end-point and compare the drop in viscosity, colored oil and conductivity. The experiments showed that three methods all can estimate emulsifying end-point of glandless cottonseed protein. Conductivity method is automatical, accurate, and simple. A linear correlation was observed between oil consuming and content of glandless cottonseed protein during emulsi fying process. It is cordinated with the linear equation y=a+bx. The value of the regression coefficient (b) was taken as the emulsifying capacity of glandless cottonseed proteins. The isolates of glandless cottonseed protein were hydrolysed by protein enzyme. After hydrolysis, their emulsifying capacity was changed as follows: The emulsifying capacity, of non-storage protein tend to decline. The solution degree of storage protein in water was increased extensively, but the emulsifying capacity of soluble storage protein declined at first and increased late.
