摘    要:肉质是人们经常谈论的一个话题。影响肉质的因素很多 ,动物的品种、性别、年龄、应激、营养与饲喂制度以及肉品的加工等都会影响到肉的品质。近年来 ,国外关于肉品质的研究报道较多 ,尤其是在关于营养与饲喂制度对肉品质的影响研究非常活跃。国内研究相对较少。本文仅就近年来限制饲喂、饲料中加入不同的营养物质如 :糖、镁、色氨酸、糖分解酶抑制剂、肌肽等营养元素对肉质的影响及其机理作一综述

Abstract:Meat quality has been discussed widely. There are many factors such as breeds, sex, age, stress, nutrition, feeding and processing which affect meat quality along the pork chain. In recent years, there are many reports about meat quality in oversea, especially the effect of nutrition and feeding on meat quality, but there are just a few reports about it in China. In this paper, the effect of fasting and some nutrition such as sugar, magnesium, tryptophan, inhibitors of the glycolysis and carnosine on the meat quality are reviewed.
