| 摘 要： | 我国产椒大省——四川，常年种椒约7万hm^2，产椒100万t，产值10亿元左右。菜椒、线椒、朝天椒是主栽种类。四川是我国辣椒消费大省，常年消费鲜椒70—80万t，干椒20-30万t，人均年消费干椒3kg以上。四川是我国加工辣椒豆瓣酱和泡辣椒的大省，常年加工鲜椒40-50万t，产辣椒豆瓣酱60-70万t，产泡辣椒数千吨，产值20亿元以上。四川有辣椒深加工企业一家，年提取辣椒红色素250t，辣椒素120t，产值8100万元。四川辣椒产业将在加工业继续发展壮大的基础上有所扩大。但四川还存在整体布署上未将辣椒种植业作为产业来抓，传统加工分散落后、精深加工不发达、综合利用未起步，加工、种植与育种科研沟通不够等诸多问题。现根据上述问题和产业发展态势特提出系列相应的发展对策。

| Abstract: | Sichuan is one of the growing-provinces of hot pepper in China. The growing area is a bout 70 thousand ha, total yield is 1000 thousand tons and the output value is about 1 billion yuan. The main hot pepper varieties are Capsicum annuum L. var. grossum, var. longum,var. fassiculatum,var. conoides and Capsicum frutescens L. Sichuan is one of big consumer-provinces of hot peppers in China. All of people consume 700~800 thousand tons of fresh hot peppers and 200~300 thousand tons of dried hot peppers annually. Sichuan is a big province in the machining of the thick broad-bean chilli sauce and kraut peppers in China. The processing fresh hot peppers are 400~500 thousand tons, the thick broad-bean chilli sauce 600~700 thousand tons, kraut peppers over thousand tons. The output value are over 2 billion yuan. There is only one fine-processing corporation for capsanthin and capsaicin from hot peppers in Sichuan, 250 tons of capsanthin and 120 tons of capsaicin, the total output values about 81 millions yuan annually. The hot pepper industry of Sichuan is extending with development of processing industry. There are some problems in Sichuan hot pepper industry, for example: traditional processing technique to get behind, underdevelopment of fine processing, no starting of multiple using, few communication between processing industry and planting breeding of hot pepper. Some corresponding soluble methods are put forward. |
