摘    要:对'玉美人','龙甜三号','高甜黄金道','日本甜宝','香沙蜜'等五大类群薄皮甜瓜代表品种进行感官检验和主要风味物质的测定结果表明,甜瓜果实中的特征性芳香物质乙酸乙酯分别与香气、苦味、综合口味、整体水平、感官总分等感官检验项目呈显著正相关关系;乙酸-2-甲基-I-丁酯与香气、质地、水分、整体水平等相关性显著;乙酸己酯与甜度和质地晕显著正相关;乙酸苯甲酯与感官检验值无明显相关性.可溶性糖含量与感官检验的甜度、酸度、质地和感官检验项目总分分别呈显著正相关.有机酸与感官检验值无明显相关性.甜瓜感官检验结果不尽相同,从而形成不同的风味.
