| 摘 要： | 对天麻草莓复合饮料的加工工艺和保健功能进行了研究,分别以天麻素含量和感官评定结果为指标,设计了天麻有效成分提取和饮料调配的2个正交实验,研究了该饮料抗氧化性、降血脂和抗疲劳能力.实验证明该饮料天麻素含量较高,口感好,营养价值高,有较强清除羟基自由基和超氧自由基的能力,降低TC、TG和LDL-C现象明显,有延长小鼠负重游泳时间等保健功能.

| Abstract: | A study had been conducted on the processing technology and the health care function of the blended beverage of Gastrodia elata and strawberry.Based on the indexs of the Gastrodin level and sensory evaluation result separately,two orthogonal experiments of extraction of the effective ingredient and formulation of the beverage had been designed and research to determine antioxidant activity,reduction of blood lipid and anti-fatigue effect in the experiment.The experimental results showed that the blended beverage had a high Gastrodin content,pleasing taste,high nutritional value,relatively high power to scavenge hydroxyl radical and superoxide radical,significant reduction of TC,TG and LDL-C,ability to extend the time for rats to swim with a burden and some other health care functions. |
